What are now famous specialty dishes are often traditional favorites of the poor people of Madrid. The ingredients not thought good enough for the tables of the rich were made into exquisite dishes by the poor: for example, variety meats such as the heart and brain, the kidneys and the liver, the tongue and the sweetbread. The most popular of such dishes in Madrid is tripe (a cows stomach). The Spanish word callos, from the Latin callum, points to the ancient origin of the dish. And yet the skill of the madrilenos lay in the fact that they made this dish socially acceptable in high society as well.
