QUINOA, 10 lb Bag
by Angelina's Gourmet (Misc.)
Quinoa (Keen-wah) (Chenopodium Quinoa) was a widely used grain by the Incas and has been grown in the Andes for centuries. The Quechua name for Quinoa translates as "the mother grain" or "super grain". The United Nations World Health Organization observes that Quinoa is closer to the ideal protein balance than any other grain. Quinoa is equivalent to milk in protein and is high in Vitamins B & E, iron, zinc, potassium and calcium. It is also high in essential amino acids. Quinoa has recently become popular in the U.S. due to its unique texture and flavor aswell as its nutritional superiority. When cooked, the thin germ circlet falls from the seed and remains crunchy while the grain, pearly and translucent, melts in your mouth. Quinoa has a slight, nutty flavor and is a good substitute for couscous or bulghur in many dishes.

Bomba Rice - 5 kilo
by Peregrino (Misc.)
Model RC-04
The ultimate paella rice. In the mountains of Murcia is a region around the town of Calasparra that grows an ancient strain of rice that matures very slowly. The mature rice is exceedingly lacking in water, and absorbs three times its volume in broth rather than twice, as is the case with the rice that we are used to. Rice from the Calasparra region has been assigned Denominacion de Origen status in recognition of its unique characteristics and high production standards. Of the two types of classic rice grown in Calasparra, Bomba is the supreme strain. Until recently it was a variety that had all but disappeared because of the intensive care it needs to grow. Chefs, however, created a demand, and today Bomba is once more cultivated for the pleasure of discriminating food lovers. The basic difference between Bomba rice and others is that Bomba does not expand longitudinally, like other rice strains, but in width, like an accordion. It does not become pasty after cooking, as ...

LUPINI BEANS (EXTRA LARGE ), 25 lbs.
by Angelina's Gourmet (Misc.)
Popular in the Mediterranean region of Europe, Lupini Beans are often found at Italian fairs and as an appetizer at Spanish beer halls. In the past, Lupins were rarely used as a grain food due the the bitter taste from the high alkaloid content of the bean. In the the last 30 years, a strain with reduced alkaloid content has been developed, called "sweet" Lupins. This "sweet" strain still requires soaking and extended cooking to remove the alkaloids. All this effort is worth it. The Lupins family of the grain legumes are one of the highest in protein content, second only to soy beans.
