The result is unsurpassed quality which has earned worldwide awards and praise. One factor which contributes to top quality is vacuum pan cooking. The fruit is cooked at temperatures of about 80 degrees cooler, resulting in better color and flavor. No artificial colorings, flavors, or preservatives are used! Another key factor to quality is the same cook who has been refining recipes and techniques for more than 30 years, bringing a wealth of experience to today's production. Carlo and Corrado Assenza are brothers. With love and passion, they run the Caffè Sicilia, located near the fantastic but unlucky (it collapsed in 1996 due to an earhtquake) Cathedral of Noto, the Sicilian capital of baroque architecture. Their sweets cannot be described. In the already rich panorama of quality Sicilian confectionery production, they have managed to create a unique philosophy that finds a clear expression in each of their products: preserves, jams, and torrone (nougat). A tart and refreshing lemon marmalade made with fresh lemon peel and a hint of sugar. La Nicchia's lemon marmalade is a sublime addition to any vinaigrette or fish marinade.
