The literal translation of the French words "Tete de Moine" is "Monk Head". Although this fine Swiss product was first created by monks, it is now produced by the lay community. Tete de Moine, made in the Swiss Alps near the town of Bellelay from rich unpasteurized cows' milk, is a sharp cheese with a full, nutty flavor. Its intense flavor is even more pronounced when compared to other cheeses from Switzerland, like Gruyere and Emmental. Raclette is not only a sociable way of eating, it is also delicious. Most Raclette Grills are designed to work with a half wheel of cheese. Simply load the cheese into the grill and turn it on. When the cheese begins to melt, you scrape it off and serve the melted cheese on a hot plate with a baked potato, pickled pearl onions, thinly sliced ham, cornichons, baguette, and of course, a glass of white wine. The worlds most famous melting cheese, Raclette is made in the Alps on both sides of the French-Swiss border. The French version is perhaps a bit softer than Swiss Raclette, but the two taste very similar. Raclette has a semi-soft interior dotted with small holes and a rosy inedible rind. Eaten as a table cheese, Raclette has a smooth, creamy taste that is neither too salty nor sharp. However, it does tend to have a strong, pungent aroma that is not for the timid. This cheese is traditionally melted (a half wheel is placed in a fireplace, then the melted top surface is continuously scraped off) and layered atop boiled potatoes, pickles, fresh vegetables and sliced meats.
